Mac and Cheese?

I love mac and cheese... How does a now gluten and lactose free gal eat mac and cheese you ask? Welp.. rice pasta and lactose free.. everything. After barely eating yesterday out of spite for the fact that I knew everything I ate costs an arm and a leg, I realized how hungry I was. At 9:30pm I made my first meal that fit this new diet. Surprisingly this was really good! Despite the fact that it costs twice as much as Kraft. Annies was the brand I had and it was so tasty! - yes of course I used the lactose free milk.

Grocery Shopping

Joke's on them. But not, because I knew if I didn't adjust, things wouldn't get better. Here I am going through my packed on the red and green side. Which foods might be on each? Welllll basically everything I currently eat is on the red side. I went grocery shopping. very disappointed. Everything is so damn expensive. I used to get milk in a bag from Kwik Trip ($1.03) and now had to buy the most generic brand of lactose free milk I could find at walmart for ($4.25). LOL WHY IS THIS NOW MY LIFE I am in college and sometimes I grocery shop at the dollar tree to dave a few dollars.

The Finding Out Day.

Soon... I have been having a roller coaster of stomach (digestive) issues over the past few months. Between being unable to use the restroom, and using it too much-- It has sucked. I tried as many people would, to manage the symptoms on their own: cutting out things they thought might be the problem, fiber, plenty of water, lots of greens, but nothing worked. After almost being late to my university courses multiple times, I figured enough was enough. I didn't want to live like this for long if I had anything to do with it. I went to the doctor that I see and we did multiple blood tests to try and eliminate more serious issues. Needless to say, they all came back absolutely perfect-- which was nice but didn't help the issue to be resolved. Given my family history of Irritable Bowel Syndrome (IBS) it was not a low possibility that I would have it. What might be the cure? Well absolutely nothing! One must simply go on a low FODMAP diet.
